Desi-style chicken stew is an easy dish suitable for days when you cannot spare more than 30 – 45 minutes in the kitchen slogging in the sweltering heat. All you got to do is grind the masala, boil the chicken and veggies, mix the two and allow it to simmer. You can serve some steamed rice on the side and you are good to go.

Try replacing the potatoes with radish (the round variety) and add peas if you like (I personally don’t like peas in my stew). Also since this is a stew, you might want to add more vegetables like – cauliflower, spinach and your other favourites. But make sure that the vegetables that you pick don’t take very long to cook.

 

Ingredients: (For 4 persons)

 

1 kg chicken
3 tsp ghee
½ onion, finely sliced
6 french beans cut coarsely
1 carrot cut to pieces
2 potatoes cut into medium pieces
Salt to taste

 

For grinding:

 

6 green chillies
2 onions
1 piece of ginger
1 piece of turmeric
10 pepper corns
1 tsp cumin seeds
Tamarind water
4 cloves
1 piece of cinnamon
1 pod of cardamom
A few mint leaves

 

Method:

 

1. Cut and wash the chicken. Cook in four cups of water till tender. Add peeled and cut potatoes, French beans (cut to medium-sized pieces) and carrots and cook.

2. Grind the masala.

3. Heat ghee in a pan and fry ½ the sliced onion. Add the ground masala and sauté.

4. Add salt to taste, with a little water to thin the gravy.

5. Let it simmer for 15 minutes.

6. Serve hot with white rice.
