3 Fun & Easy Mango Recipes

Before we all say goodbye to the mango season, here are a few recipes to enjoy the last few mangoes in your pantry!

Mangoes need not always be ripe to make yummy dishes. And, raw mangoes aren’t necessarily meant for pickling and salting. Here are three fun and easy recipes with mangoes to help you enjoy the khatta delights! Is your mouth watering yet?

Mango and mint cooler
This recipe is all about adding extra zing to your regular aam panna (raw mango drink).

Ingredients

  • 1 green mango (medium)
  • 1 tsp cumin seeds, roasted
  • 1 tsp black salt (sea salt optional)
  • 3 tbsp honey
  • 1 tbsp chaat masala
  • 3 tbsp sugar
  • A few sprigs of finely chopped mint leaves
  • 2 lime wedges
  • 3 cups of water

Method

  1. Boil 3 cups of water and add the raw mango to it. Reduce the heat and simmer till the mango is tender.
  2. Remove the mango from the water and set it aside to cool.  Peel the mango and remove the pulp using a spoon.
  3. To the mango pulp add cumin seeds, black salt, honey, chaat masala and blend well till smooth.
  4. Add water to the mango mixture and refrigerate.
  5. Spread the sugar and mint on a plate. Moisten the glasses in which you intend to serve the drink with a lime wedge and overturn them in the sugar and mint mixture to coat the rim evenly.
  6. Pour the green mango mixture into the glass with ice and serve.

Mango Salsa
Unexpected guests have come visiting and you have nothing in the pantry but nachos and a few raw mangoes? Here’s the perfect recipe for just such a situation.

Ingredients

  • 1 green mango (medium)
  • 1 medium onion
  • 2 tbsp mango juice
  • 1 pinch of salt
  • 1 pinch of pepper
  • ½ tsp of chilli powder
  • 1 green chilli
  • 1 bunch of fresh coriander

Method

  1. Chop the onions, green chillies and coriander finely.
  2. In a bowl, add all the ingredients mentioned above, except the raw mango.
  3. Boil the raw mango in water so you can get the pulp out of it easily.
  4. Add the raw mango to the bowl and blend it with a hand blender.
  5. Serve chilled with nachos.

Coconut and Mango popsicles
This recipe will definitely be a hit with the kids and adults alike.

Ingredients

  • Popsicle moulds
  • Honey, as per taste
  • Coconut cream
  • 3 to 4 over ripe mangoes

Method

  1. Cut the mangoes, scoop out the flesh in bowl along with the juice.
  2. Mash the mango and get a smooth consistency. Use a blender, if required.
  3. Add honey, if the mangoes aren’t as sweet
  4. Take coconut cream in a separate bowl. Add honey to this too, to sweeten it. Whisk it all in.
  5. Spoon the mixtures into the moulds in any pattern you choose. If you would like to see clearly separated colours, freeze each section before adding the next spoon.
  6. Add in your popsticks and keep in the freezer for a few hours.
  7. Obviously, serve chilled!
